Removing Desktop Folders - How?

Trying to set up Endless for my elderly mother. Ideally she just needs a simple desktop with email and web browser icons. How can I get rid of the “More Apps” folder icon? With other folders I can delete each app icon in the folder and then delete the folder icon - this would be impossible with “More Apps”.
I’m proficient in editing config files, so that is an option if someone can point me to the correct file(s) to edit. A little experimentation though indicates that the OS is truly locked, config files are binary. dconf or gnome-tweak would be helpful but i gather not ready yet for Endless.
Please advise! Endless seems like a really solid and clean OS, I hope development is continuing.

Can not remove icon “More Apps”

More Apps is special-cased and cannot be removed from the desktop.
